At Sapio, Alessandro and Roberta place Catania at the centre of their cooking. Their ambition is to offer something distinctive to a city shaped by the fire of Etna and the waves of the Ionian Sea, while contributing to its growing reputation as a destination for food and wine.

The restaurant works with produce from its own farm and with local producers, looking beyond Sicily only when an outside influence brings something enriching without disrupting its sense of place. This approach gives the cooking a clear connection to its surroundings, while leaving room for thoughtful interpretation.

Respect for ingredients extends beyond their finest cuts. Sapio makes use of parts that are often discarded, recognising the work involved at every stage of production and seeking to waste as little as possible. That same attentiveness informs the restaurant’s wider redevelopment and sustainability efforts, including reducing water consumption and keeping the use of plastic to a minimum.
